MEDITERANEAN MEATBALLS WITH COUSCOUS SALAD
This is my favorite dish when I am in the mood for a light and refreshing meal! You can also make this meal with salmon seasoned with salt and pep! Hope you enjoy :)
INGREDIENTS
For the meatballs:
-1 lb ground lamb
-1 tsp chopped mint
-1 tsp garlic powder
-1/2 tsp salt
-1/2 tsp pepper
For the couscous salad:
-1 cup uncooked couscous
-1 small chopped yellow mango (any mango will do)
-2 chopped green onions
-1 chopped red bell pepper
-1/2 cucumber chopped
-Spinach (as much as you want for the salad)
-A few lemon wedges to serve

Instructions
1) Make your tzatziki sauce and set in the fridge while preparing your meal. The link above will take you to my sauce recipes!
2) Boil your couscous according to the package instructions. Set aside.
3) In a bowl, mix in the chopped cucumber, chopped green onion, chopped red bell pepper and chopped mango, in with the cooked couscous and set aside.
4) In another bowl, mix the lamb, mint, salt, pep and garlic powder all together. Form into balls (about 10-12 balls). Pour about a tsp of oil in a pan and cook the meatballs on the stove for 15 minutes on low heat flipping them throughout so they brown evenly. (You can also cook these in the oven on 400 for 15-20 minutes).
5) To serve, place spinach leaves in bowl, top with the couscous salad and a few meatballs. Serve with tzatziki and lemon wedges!
