SWEET AND CREAMY TOMATO FUSILI
Sweet Creamy Tomato Fusilli, gluten free and vegan. Let’s just say my leftovers are already gone and I just made this a couple hours ago…
In a blender or food processor, add the following and blend:
•1 1/4 cup plain nut milk (I used malkorganics)
•1 1/2 cup of tender sweet potato’s (baked, sautéed, roasted.. whatever works for you)
•1/4 cup avocado oil
•1/2 tsp salt
•1/2 tsp minced garlic
•1/2 tsp chili flakes
•4 tbsp sundried tomatoes in oil
•3 tbsp nutritional yeast
•Add 1/4 cup or so of reserved pasta water. (When making your pasta, just scoop out some pasta water to add to your sauce)
Pour over banza chickpea fusilli! Top with salt, pep, chili flakes and basil :)
